Abstract

This project analyzed both animal health and biosecurity in slaughter of cattle from the municipal road of Guaranda. Influential processes to slaughter were investigated as: review before morten and post morten of bovines; The diagnosis made by the veterinarian was evaluated. An observation was made of the animals that enter, where data on ectoparasites, body condition, locomotion and coat status were taken. In parallel, the unloading area, rest pens, perimeter fences, staff clothing and sterilization of slaughter tools were analyzed. As a result of the study carried out, it was found that 30% of the cattle that enter the Guaranda road for slaughter do not meet the minimum health standards, both in body condition and in external and internal parasites. In biosecurity it was evidenced that they do not have an adequate discharge infrastructure, a cold room, adequate protective clothing, or effective control of disease-transmitting species, which indicates that the rules of biosecurity and animal health of the camal are not optimal for which does not have MABIO certification (slaughterhouse under official control) granted by Agrocalidad.
